Citron and orange peel

Lemon and orange peel taste sweet and aromatic and can be found in every stollen and many gingerbreads; But they are also part of many breakfast cereals. The shell parts of these citrus fruits are long lasting in the kitchen cupboard in a dry place by the sugar. It is also possible to make lemonade and orange pulp fresh, but actually you do not win either from commercially available lemons or oranges.

It depends on the thick shell

Citron is made from the thick-fleshed shell of the lemon ( Citrus medica ). Originally from Southeast Asia, this citrus plant is now native to the Mediterranean. The sparse flesh of its fruits weighing up to 2 kg is barely used fresh. The situation is different, however, with its yellowish-green to golden-yellow skin, which, in addition to the production of lemon, is also highly sought after by perfume manufacturers or made into jam or liqueur. Orangeat comes from the shells of bitter orange or bitter orange ( Citrus aurantium ). This fruit grows in almost all subtropical regions of the world. The bitter orange originated from a cross between the grapefruit and the mandarin. Their fruits taste fresh odious. The fruit peel of Pomeranze is used in addition to the production of orangeat as well as the basis of the English Bitter Orange Marmalade and some liqueurs. The essential oils contained in it are also used in the perfume industry.

Make orange peel and lemonade yourself

In order to obtain orangeate or lemon, the citrus fruits must first be peeled. The white shell parts should be removed as completely as possible, as they contain bitter substances. Afterwards, the bowls of salted water are boiled, weighed and then returned to the pot together with sugar. It should be used in the production of lemon and orange peel as much sugar as peel.

Together with the sugar and a little water, the bowls are then simmer for an hour. Finally, the fruit peel have their typical, glassy appearance. Then the bowls are removed from the pot and allowed to dry. This can take several days. Finally, the shells are then crushed into cubes. In the supermarket or on the market, lemon and orange peel are sometimes also sold in larger pieces. If these are on offer, you should choose the latter, because they have more flavor.

Small kitchen tip

If you do not like the taste of orange peel and lemonade, you can easily replace these baking ingredients. Suitable are, for example, baked fruit, dates, candied pineapple, dried sweet or sour cherries or ginger. The dried fruits can be soaked in tea, juice or rum for a few days before use.
