Panettone is an aromatic, dome-shaped yeast cake from Milan, which resembles the Christstollen. Traditionally, it is baked and eaten all over Italy at Christmas time, but also on New Year's Eve and Easter. Also in Germany, the fruit cake enjoys increasing popularity. With our recipe you can easily bake the panettone yourself. The pastry is a pleasure in every season!
Origin of the panettone
Numerous stories surround the creation of the Panettone. One, according to one of the recipes, was a baker's apprentice called Antonio, who wanted to impress his beloved with a sweet bread made of butter, eggs, flour, milk, raisins and candied fruit. The "pane de Toni" soon became famous throughout Milan.
Panettone: calories and nutritional values
100 grams of panettone contain around 330 kilo calories (kcal) and contain about ten to 20 grams of fat, 60 grams of carbohydrates and seven grams of protein.
Admittedly, this Italian cake specialty is not exactly the low-calorie diet. But compared to other sweet Christmas treats, Panettone's calorie balance can be quite impressive. For example, 100 grams of Christ Stollen contains around 50 kilocalories more and Vanilla Kipferl proves to be an even bigger calorie bomb at 500 Kilocalories per 100 grams. From time to time the enjoyable snacking may also be allowed once.
The traditional preparation of Panettone usually takes several days. He is driven according to original recipe with a wheat sourdough and enriched with dried and fermented fruits. Since the dough is not completely cooked through, the cake remains nicely juicy and airy.
Nowadays, instead of the original ingredients, mainly baker's yeast and candied fruit such as orange peel and lemon are used.
Make Panettone itself: A delicious recipe
Panettoni are now mostly industrially made and offered in all sorts of variations - be it with chocolate, as a savory variant or in muffin form.
But there is nothing like a homemade panettone. Although its preparation makes every hobby baker to a small patience sample. But with this panettone recipe you are guaranteed to succeed!
Ingredients for eight portions:
- 250 ml of milk
- 100 g of butter
- 500 g flour (Type 405)
- 30 g of yeast
- 100 g of sugar
- 1 egg
- 2 egg yolks
- 1 pinch of salt
- 40 g each of orange and citric acid
- 80 g raisins
- a little butter for baking and painting
Preparation of a panettone
Warm the milk with the butter in a pot until the butter melts. Sift the flour into a mixing bowl and mix it with the sugar and the pinch of salt. Press a trough in the middle and crumble the yeast into it. Add the milk-butter mixture slowly and add two egg yolks and the whole egg.
Now mix the ingredients with the dough hook of the hand mixer to a smooth dough. Cover the yeast dough with, for example, a plastic wrap or a kitchen towel and leave it in a warm place for at least 30 minutes until it approximately doubles in volume.
Then knead the dough again and stir in the lemon, orange peel and raisins. Depending on your preference, you could also replace the candied fruit with almonds, pistachios or pieces of chocolate and season the dough with the peel of an untreated lemon or orange.
Make the dough on a floured work surface into a ball and place it in a well greased panettone baking pan. If you do not have a special shape on hand, you can also use a normal springform or clay pottery pot lined with baking paper. Cover the dough in the mold again covered in a warm place for at least 30 minutes.
Bake panettone and serve
In the meantime, heat the oven to 180 degrees top and bottom heat.
Cut the dough surface slightly crosswise and coat with some liquid butter. Bake the fruitcake at 180 degrees on the second bar from below for about 60 minutes. To protect the cake surface from burns, you can cover them with aluminum foil after two thirds of the baking time.
Allow the panettone to cool well before removing it from the mold. To serve, you can cut the Panettone into vertical slices. Traditionally, warm sweet drinks or a sweet wine are served.
