Beetroot (also: beetroot, beetroot) has been consumed for several centuries. However, there is no wild form: The Romans made in Europe, the turnip known, from which the beetroot was bred and further refined. Many of them are impressed by their color. Beetroot contains many valuable ingredients that can positively affect our health.
Beetroot: Ingredients like iron
As a slightly sour side dish in herring salad or raw with other vegetables, it often receives little attention. It was previously assumed that beet juice by the color would have a blood-forming function. But it is not the red pigment betanin that makes the root vegetable so valuable: it is rather the ingredients contained in beetroot vitamin B, folic acid and the trace element iron, which are involved in the formation of blood.
When iron deficiency is therefore often recommended beet juice. However, the human body can better utilize animal iron. However, beetroot is a good source of iron for vegetarians, for example. It is recommended to take beetroot with vitamin C rich foods and drinks (such as orange juice), or as a beetroot salad in raw form, because many nutrients are lost in the preparation.
Beetroot increases stamina
Researchers have found in studies that athletic endurance is enhanced by regular drinking of beetroot juice. When compared with the same-colored currant juice, the beetroot juice performed significantly better.
Presumably, this is related to the increase in nitrates in beetroot juice, which the body turns into nitrites. These, in turn, react with the iron atoms during cell respiration of the enzymes.
Beetroot juice for hypertension
Beetroot Juice has a completely different effect: high blood pressure can be reduced quickly and significantly. Again, it is believed that this effect is triggered by the nitrates. Those who suffer from hypertension, it is wise to drink half a liter beet juice.
After just one hour you can notice the hypotensive effect, the greatest effect occurs after about three to four hours. Since the positive effect can last up to 23 hours, patients with arterial hypertension can already achieve a significantly positive effect with two glasses of beetroot juice per day.
But beware: beetroot also contains a lot of oxalic acid, which can lead to the formation of kidney stones. Those who are prone to kidney stones should take beetroot only in small quantities.
Recipes with beetroot
Although beetroot in the salad is always good, for example with lamb's lettuce and goat's cheese or even small shredded with apple and lemon refined, but why not even try out an unknown beetroot recipe? After all, beetroot is healthy and goes well with many dishes.
With this recipe you quickly conjure up a beetroot soup for the cold days:
- a glass of beetroot
- 2 tsp. Large-leaved parsley
- 2 tablespoons cream
- optionally salt and pepper or vegetable bouillon cubes
- sugar at will
The beetroot is boiled briefly (in its own juice) and refined with spices. Now puree and add on the plate parsley and cream. Already the beetroot soup is ready!
Beetroot and orange soup
If you have more time, you can also try a delicious beetroot and orange soup. Simply puree the beetroot with potatoes and half a liter of orange juice. Add broth and season to taste with cinnamon, cayenne, sherry and ginger. Add a little salt, and season with a teaspoon of crème fraîche and chives.
Even beetroot Carpaccio is great as an appetizer.
Bring in the red beets
Important for all beetroot recipes and also when inserting is, when cooking apron and best rubber gloves not forgotten! The juice is difficult to get out of the clothes.
Who wants to cook beetroot, they should boil before in any case. Then cut small and fill in glasses. Boil a brew of two-thirds of water and one-third of vinegar with finely chopped garlic, onions, cumin, salt and sugar and pour into the jars.
Beetroot has both raw and boiled down few calories. For comparison, the kcal value is even slightly below that of an apple.
